Tuber aestivum, also known as Scorzone Truffle, is found primarily in Italy but also in Spain and France. It is harvested May through September. It has a rough bark and a softer beige interior with white marbling. Its flavor and aroma are much softer than the Winter Black, making the price more palatable.
