The snowy white marbled wagyu beef is imported from Miyazaki Japan where the beautiful black cattle are born and raised. The Miyazaki wagyu beef has been registered as a local trademark in the Miyazaki region. The Japanese Black (Kuroge Washu) is the only type of wagyu exported to the U.S. The cattle breed continues to deposit fat into the muscle after puberty as opposed to being on top of the muscle, giving the meat its unique high marbling. A5 is the highest available grade and the only grade we supply. Finished for over two years on grains, minerals, and sometimes beer. Miyazaki cattle are raised in the fields by the warm Kuroshio river in Japan. The wagyu cattle can weigh over 2,000 pounds–that’s a whole ton! Certificates accompany each shipment that are issued by the Japanese government. The breed can be traced back four generations. Read our travel (b)log about our odyssey to Miyazaki Japan.
