Black Winter Truffles
Tuber melanosporum, have a distinctive and powerful aroma. Harvested from November to March. The Black Winter Truffle grows slowly in the undergrowth throughout the winter. It’s sometimes known as a Perigord, because it is found in that region in France. It is, however, found in other areas. So, not all Winter Black Truffles are Perigord. They do grow predominantly in France, but also are found in Spain and Italy. The flesh is black with white marbling. It is considered to be the very best black truffle and unlike the white winter, this one can be cooked, but only very quickly.
