White Alba Truffles
The undisputed king of all wild comestibles, the tuber magnatum, is a fungus foraged in Italy, from October to December. They are found in other areas of the world, Croatia and Greece for example, but the highest quality comes from Italy. They are found near the roots of oak, chestnut, hazelnut, and hornbeam trees. The tree and the truffle have a symbiotic relationship, that is, a mutually beneficial relationship between different living organisms. The truffle gives the tree water and minerals, the tree gives the truffle sugar.
