Black Australian winter are basically the same kind of black winter we import from France during our winter (November-March): we can prolong the season also during our summer thanks to the winter in Australia.
Story: a group of Australian farmers studied the soil in Western Australia and with the help of mycologists and scientists from Europe, they started the first oak tree plantation 15-20 years ago. The trees planted are inoculated in order to produce black winter truffle (melanosporum) during the winter. The forages/hunters use dogs to find them because they grow deep in the ground. The field is irrigated to help the truffles grow correctly and the soil is constantly moved to make it “smoother” in order to have more rounded truffles.
So far the Australian farmers spent more than 6M dollars in research and development of their plantation and the production is every year remarkably better in terms of quality and quantity.
These first shipments are still limited but in few weeks we expect the production to go in full force reaching 100% maturity and aroma with good size and extra grade.
